Baked Latkes – Healthier Passover

Baked Latkes – the goodliness of potatoes with a hint of onion and garlic, baked until perfection – a much healthier way to enjoy your Hanukkah. Enjoy holiday, but guilt free!

My husband and I commute to work every single day as we work at the same place. Last week, he took a sick day and I had to commute alone. I have always had quite poor night vision, which worsens as the year goes by. On top of that, the roads of Boston are terrible. Driving in Boston is similar to driving in Kolkata. So, when I drove back home in heavy rain, I was literally shaking due to the fear.

After that, I’m not sure what happened but I went into a heavy depression. You must be wondering why!

I felt bad inside that I became so dependent and vulnerable. A few years back, I did everything myself. I studied and worked in Buffalo for 3 years and in Boston, I worked and did everything myself for 6-7 months before we got married. I used go to grocery shopping at midnight and look at me now – I am scared to drive at 4pm. I drove in heavy snow of Salt Lake City and Buffalo.

Dependency kills me. No matter what kind of dependency it is. My parents raised me to be a very strong and independent woman. Incidents like this send me into a depression.

However, my parents suggested, and I decided, to commute to work myself again alone. By doing so, maybe I will gain my confidence back.

Anyway, I finished up the website work for now! I have some more work to be done – like building a recipe index page and creating the portfolio. I will work on them slowly. Do you have any suggestions? If you do, please tell me – I will work on that.

Hanukkah started yesterday. We don’t celebrate Hanukkah except for cooking at home. I prepared brisket with mushroom and baked latkes.

When I came to this country – I had no idea about Latke. I bought a bag of latkes from Wegmans as they looked very similar to our potato fritters. As it was made from potato, I loved it. Since then, I buy a frozen pack of Latkes every month.

I am not sure why I never tried to make them at home.

Baked Latkes are much simpler and healthier than store bought ones. I am planning to ditch the store bought ones and opt for these healthy baked latkes

Latkes are nothing more than potato pancakes. Shred some potatoes, a tiny bit of onion, squeeze them, mix them with eggs, matzo meal and fry them. Traditionally they are deep fried – but I baked them. They are best served with applesauce and sour cream.

Recipe for Baked Latkes

  1. Preheat the oven to 450 F. Line a cookie sheet with parchment paper. Drizzle oil over it and with a pastry brush, spread it evenly.
  2. In a food processor or with a box grater, shred peeled potatoes. Set it aside in a bowl. Repeat the process with onion and set it aside in another bowl. Have on hand 4 tea towels.
  3. Line the tea towel on a chopping board. Add some potatoes and press it hard to squeeze the juice out of them. You need to change towel every time to ensue you get all the water out.
  4. Repeat the same process with onion.
  5. Add garlic, salt, black pepper, matzo meal and egg mixture. Using your hands, combine them well.
  6. Shape them like flat patties and line them on a cookie sheet. Repeat this until you’re done with all the mixtures. You should be able to make 18-20 patties. Drizzle oil over them.
  7. Bake them for 20-22 minutes until one side is golden brown. Take them out of the oven, turn them over and bake the other side. Take them aside in a plate. Serve warm with applesauce and sour cream.

The new look of the blog is very nice… this sounds like a really interesting recipe to try.. as usual lovely pics… I was reading through your post and wondering about myself… Actually, all throughout my marriage, I have been so independent that sometimes I feel that it is bringing a lot of distance between both of us… 🙂 So take it positively… I wouldn’t call it dependency… I am sure your husband enjoys his rides with you and maybe, you can drive when he is around so that you don’t feel the nervousness… Take care…
