Chinese fried rice – Fit foodie contest

The reason for this post is little different than my other post. I am part of a Facebook group called ‘The Fit Foodie‘. The Fit Foodie is a place where people talk about healthy but delicious food. Also, people share their story of losing weight and different meal options. Often people ask different questions and others try to answer their doubts. There are so many things to learn from this group. So please join us if you are like one of us.

Food is not an indulgence for me. I probably bake cake or cookies once a month. But when it comes to every day food, I choose to make it healthy. I don’t like repetitively eating boring salads or chicken noodle soup. So I try a twist in healthy ingredients and come up with masterpieces. Other fit foodies are just like me – they love to eat but in a healthy way.

Last week they posted a game called mystery box challenge. Shraddha shared a list of ingredients, and I have to cook a meal by taking at least one ingredient from each column. 10801878_10201897277993342_1857619263950994696_n  I never participated in such competition, but it was fun because I was about to invent the best dish of my life. I do not care if I win or lose because I am happy that I tried something new that came out well.

Out of the first column–grains–I chose brown rice. For protein I chose green beans, chicken, and eggs. In vegetables, I chose green pepper and mushroom. And last but not the least, I chose pineapple and pomegranate seeds from fruits. M hates eating brown rice, and there was a pound of brown rice sitting in my pantry. After speaking with my mom, I thought of making Chinese fried rice. I used shredded chicken pieces from a rotisserie chicken leg. You can use any type of cooked chicken or you can cook the chicken from scratch. Just add some oil and fry the chicken pieces with salt and black pepper. This Chinese fried rice recipe can be made with shredded turkey pieces as well. Consider this recipe if you have a lot of leftover Thanksgiving turkey!

We had this dish for lunch so it was not accompanied with anything else. But if you are serving for dinner do not forget to make a cucumber and tomato salad. It is a kid-friendly dish because it has proteins, vegetables, and fruits. Parents, this is a good recipe for children who refuse to eat their fruits and veggies. You can prepare this in advance and store in a Pyrex dish.

Recipe for Chinese Fried Rice

1. In a thick bottom pan, cook the rice as directed. Strain it and take it aside.

2. In a non-stick pan, heat 1 teaspoon oil in medium-low heat. Add eggs, salt . Scramble it into pieces. Take it aside.

3. In another non-stick pan, heat oil in medium-high heat. Add onions and fry for 3-4 minutes, until they are translucent.

4. Add garlic and fry for a minute or two, until aroma of garlic comes out.

5. Now add vegetables and continue to cook for 3-4 minutes until they are crunchy on sides.

6. Add chicken pieces and cook for 2-3 minutes.

7. Now add the pineapple and cook for 1-2 minutes. If you cook more, pineapple will be mushy.

8. Add soya sauce, salt and black pepper and stir it.

9. Now add the strained rice to this and cook for 2-3 minutes by stirring well.

9. Add fried egg pieces to the rice and stir it well.

Take it aside in a plate and garnish with pomegranate seeds(recommended very much) and pineapple pieces. Serve it with salad.

  1. I used to make a variation of this all the time. I used green onions in it
    also. I never knew that Matt doesn’t like brown rice. I mostly use only the brown
    except for certain dishes which work better with white.
