COQUITO: EGGLESS COCONUT NOG is an eggless, sweet a creamy coconut with spike of spices and booze of spicy rum drink – is there a better way to celebrate your Christmas?
There are many reasons to celebrate and have a glass of drink today.
Since Monday, I have started a new cardio workout that is helping me in so many ways. First 2 days I was heavily sore but then I got used to it. Man, after that half an hour, I feel like I have achieved something. It’s making me so much more energetic and positive. So do check out this workout!
Second, two stock agencies accepted my photographs. Very soon I will be selling my photographs through them.
Third, we had a blast in holiday party hosted at our office and I got ushered by gifts from colleagues. It’s been a super fun week at work!
So on a Friday eve, I want to put my feet up and drink a glass of coquito with the man of my life.
Like my husband asked you must have been wondering – “what the heck is coquito?” When I was looking for alternate eggnog ideas as Christmas drink, out of many coquito seem to get my attention the most. It’s Puerto Rican eggnog, which is solely prepared with coconut.
I have prepared this recipe without eggs as many like my mom wants a drink without egg. It has creaminess of coconut, sweetness of condensed milk, kick of spices, and booze (amaretto or spicy rum is strongly recommended). So if you’re looking for alternate and different eggnog – I highly recommend you try this one!
You need to work only 10 minutes to prepare this drink. So prepare this much ahead of your Christmas party and serve it chilled. Your guest will thank you, trust me!
In a blender, mix all ingredients and transfer that to a pouring jar.
And that’s it! Chill it for at least 2 hours (more than that is even better) and serve it with alcohol. For kids and pregnant women, skip the alcohol.
Recipe for Coquito: eggless coconut nog
NOTE: My mom made this with fresh coconut milk – taste is much better and authentic.

Instructions
- In a blender add coconut milk, coconut cream, evaporated milk, condensed milk, ground cinnamon, ground cloves, ground nutmeg, vanilla extract. Blend it for 2 to 3 minutes, or until smooth,
- Take it aside in a pouring jar. Chill it for 2 to 3 hours or more.
- Pour the drink into glasses. Add spiced rum or amaretto. Serve with cinnamon stick.
