Crustless Quiche

Life is not always smooth and perfect! About two months ago, I realized that I had gained a couple of pounds. I weighed myself early morning on the same scale for the last four years. When I looked down at my scales, I could not believe it. I got down and weighed myself again, but it was same. It was entirely shocking as well as surprising for me because all my clothes were fitting fine.

I also noticed that for the first time in my life, I gained some fat around my tummy. I called my doctor and booked an appointment with him. After checking, he concluded that I am bleeding internally. Of course, I did not believe what he said. So I contacted a specialist. He ran a bunch of tests and concluded that I was stressed. In 2015, who is not stressed?

While I went from one hospital to another, I decided to change some of my eating habits. I ditched my milk chocolate addiction and started eating dark. I am also consuming 5 cups of green tea a day. As well as this, I am having brown rice over white. More importantly, we are eating at restaurants less. I am sure many of you are wondering why I am not exercising. Well, it never works with me.

Every single human body is different. In my case, eating a healthy diet helps me to stay at my weight. For a 5 feet and 3 inches girl, 108 pounds is not a deadly scenario, but I prefer to stay comfortably at my weight.

While browsing through healthy seasonal recipes, crustless quiche (pronounced (/ˈkiːʃ/ keesh)) happened to cross my path. Back in October, when we were in Dartmouth college, I ate quiche from a local pastry shop (Lou’s restaurant and bakery) for the first time. It was the most delicious breakfast that I ever had in my life. However, my husband told me that it is nothing more than an open-faced pastry crust filled with cheese, meat, seafood, and vegetables. For a health fanatic like me, pastry crust is not something that I can eat on an everyday basis. So I never tried making at home.

But crustless quiche is a lot different.

It has eggs, vegetables, cheese and most importantly, fresh herbs and sautéed onion. There is nothing better on the earth than fresh herbs. I have used rosemary, thyme, and oregano. (Feel free to use dried ones if you cannot access the fresh herbs). Flavors of sautéed onion, garlic, and mushroom with gooey cheese and herbs will make your meal perfect and delicious. It’s damn easy to prepare too. Preparing to devour the meal can be done within an hour. You can have it as your weekend brunch, or lunch or dinner.

With a quiche, you can add anything you like and want. Some other things I have tried are sautéed asparagus, different kind of wilted greens (kale or chard), other kind of herbs (parsley), and low-calorie cheeses.

Diet Alternatives:

You can replace sharp cheddar cheese with any low-fat cheese of your choice.

You can also replace the whole milk with skimmed one.

Nutrition facts (per portion) : Calories: 336.3; Carbohydrate Content: 17.9 g; Cholesterol Content: 421.2 mg; Fat Content: 21.2 g; Fiber Content: 2.3 g; Protein Content: 19.8 g; Saturated Fat Content: 7.3 g; Serving Size: 4; Sodium Content: 220.9 mg; Sugar Content: 2.0 g;

Instructions

1. Pre-heat the oven to 350F. Have on hand a pie dish.

2. In a non-stick pan, over medium heat, heat 1 1/2 tablespoons olive oil. Add onion and cook it for 8 to 10 minutes covered, or until it is soft. Add garlic and mushroom and cook for 7 to 8 minutes uncovered, or until mushrooms are soft and tender. Add spinach leaves in batches and cook it for 3 to 4 minutes, or until the leaves are wilted and most of the water is gone. Take everything aside in a bowl.

5. In a mixing bowl, crack eggs. Add milk, flour, thyme, rosemary, oregano, salt and black pepper. Stir to mix it well.

6. In a pie dish, spoon 1/2 tablespoon olive oil. Brush it well. Spoon the vegetable mixture at the bottom. Top it off with shredded cheese. Pour the egg mixture on top of it. Bake it for 45 to 50 minutes, or until it’s golden brown on top and solid in center. Serve hot with coffee/tea as breakfast.

  1. We all have the similar problems I guess! The Weight Gain Problem. I have put on tons of weights after my sons birth, trying to get back into shape but …..
    Anyways…I Love quiche. So filling and healthy. That clay pot…absolute <3

    Srividya, I think eating at home is not that harmful as eating outside. I eat a lot outside, and which is why this 5 pounds weight gain happened. 🙁
