Evening with egg roll

A decade back in 2003, I used to go to Park Circus  for my coaching classes. There was a roll corner next to my coaching class. I did not get a picture of that corner then, but I will when I will visit Kolkata again.

They used to carry out it so seamless that I used to wait for my coaching classes eagerly. EggRoll, Kati Roll, Double Chicken Roll, Mutton Roll and not ending list of how many rolls! This is a very common street food in India. People eat at canteen(university cafe), road – side, during the durga puja festival every now and then.

Those egg rolls are deemed to be very unhealthy because – they are made with bad quality of oil. My mum allowed me to have them only once a month :cry:. What she did, she came up with her own egg roll, egg mutton/chicken roll. Well people of Kolkata will agree with me on this – street food is street food. You can’t get that taste at home made rolls.

This was golden days when I did not have to cook… now coming back to today’s date. Cafe at my work place is good to fill the hole in my stomach, but it tastes horribly bad. So I make my lunch almost everyday(a few days in a month I eat out) and bring to work. And bringing sandwich is very boring, but I don’t want to eat rice or heavy meal at work. I saw in the cafe that they sell wraps. So it clicked in my head – why don’t I make my personal wraps?

So this is exactly I do for my weekday lunch.

Recipe for Egg Roll

I get low carb tortilla from Trader Joe’s (each is only 45 calorie :open_mouth: ). You can make your own flat bread. My mom always did her own bread for Roll.

I crack two eggs and add some salt and black pepper to it. You can make 5 egg rolls with two eggs.

Then I put very little oil in a pan. When the oil warms up a bit – I put my tortillas there. Then I put some of my egg mixture, on the bread. Once the egg is a little bit cooked, I turned up. So when both sides are done –  I take it out and put it on a plate with paper towel. I prepared all the breads at a time.

Then I chop all vegetables and get it prepared.

Some times I use cooked chicken(Check my notes at the bottom).

Put everything on the bread and drizzle some ketchup and wrap with paper.

Enjoy your wraps or rolls with hot chai/diet coke – Don’t forget to gossip.

[Note: This is how I cooked chicken. I marinated the chicken with lemon juice, salt and red chili powder for 30mins. then i chopped some onion, ginger and garlic(Remember chop – don’t make a paste). Then I chopped some mint leaves and green chillies as well. I put some oil in the pan and add the chicken from the marinate. Don’t put the marinate – squeeze the chicken before you put in oil. Once the chicken is not pink, I add onion, ginger and garlic. Let them cook a few minutes. Finally I add hot chillies and cook some more minutes. At last, I add the mint leaves and close the flame.

***(Remember – mint leaves are mandatory, it gives very nice taste)***
