Korean Pancake with soy dipping sauce

For the last two weeks, there is a huge change in my lifestyle. Now I wake up close to 7am (used to be 8:30am) and reach the office by 8:15. Three things have changed:

1. I get peaceful coding time in the morning.
2. I avoid the evening traffic by leaving at 4:30pm.
3. I eat breakfast (instead of brunch).

This small lifestyle change has three benefits:

1. An improved digestive system.
2. More time in the evening, (to spend on photo shoots or reading).
3. Increased productivity because no one comes in until 9:30am. I get a peaceful hour of coding in while sipping black chai.

I Googled healthy breakfast options, as I have breakfast every day. I found that having a healthy breakfast is good for one’s health. I am going to confess some old habits and how much suffering it caused: I was THAT person who used to wake up at 8:30am and reach the office at 10am. Then I would have my first meal at noon.  It leads to nothing but bloating, indigestion and overeating. I did not gain weight, but I was tired in evening and irritated at my husband. Now I eat a healthy breakfast, light lunch and even lighter dinner. It stopped me from overeating at night.

It is better to eat more when you are active and less when you are inactive. I am not saying you to follow me because I am so far from being perfect. When I started following this routine I was eating only eggs for breakfast. But how long can a person can eat only eggs? So I had to look for other options. As always, it was my mom’s unique solutions that saved me.

I was quite a naughty child, so feeding me was very difficult for my mom. She used to invent different recipes and read books to make healthy meals for her stubborn child. She makes her pancakes with onion and green chiles. But as I was not an easy person to convince, she had to learn how to make different pancakes. This week, when I was asking her for an easy breakfast recipes, she told me to try her special pancake. When she explained it to me, I found that it was nothing but a Korean pancake. I wondered where she got a recipe that I had never heard before. She calls it creative parenting; I call it healthy brunch options.

So if you have a stubborn kid (like I was) or thinking about a different breakfast, try this Korean Pancake. It requires very little oil and is filled with healthy vegetables that your little one probably refuses to eat. I made a soy dipping sauce, as suggested by mum. You can skip it if you do not have time. Let me know how it turns out?

Recipe for Korean Pancake 

Pancake

1. In a bowl mix flour, water, eggs and salt. Set it aside.

2. In a non-stick pan, heat one teaspoon of oil. Add crushed garlic and fry it for a minute or two, until the smell of garlic comes out.

3. Add shrimp pieces and fry for 3-4 minutes until opaque. [ DO NOT OVER FRY SHRIMP]

4. Add shrimp and garlic to the flour batter.

5. Prepare the vegetables as directed. You can use a food processor or hand grater to grate them.

6. Add vegetables and black pepper to the batter. If the batter is very thick, you can add 2 – 3 tablespoons of water.

7. In a non-stick skillet, heat 1 teaspoon of oil in medium-high heat. Ladle enough veggie batter into skillet. Fry for 4-5 minutes, per side until they are crispy golden.

Soy Dipping sauce:

Microwave all ingredients for 2- 3 minutes, until sugar dissolves. Korean pancake is best served warm with soy dipping sauce.

  1. This is a great recipe to get J to eat his veggies. I have made a similar
    pancake using some other veggies and he ate them.

    This is quite a bit of work for the morning. Can you reheat and make it when there is more time, like on weekends ?

    Yes. I generally prepare in the weekend and re-heat in the weekdays.
