Paneer bhurji aka Paneer stir fry

Desk lunch!

When I was browsing the internet during my free hours (getting fewer every day) last week I came across this term (the original article is here from Saveur). I am not much of a cafeteria person. The Boston Globe cafeteria is fine but the food doesn’t taste like food, and I always gain some pounds whenever I eat there for more than a day.

I am more of a lunch bag person. I bring two poached eggs (cooked by M) for breakfast. Then he packs me some fruit, cheese and two Pyrex containers of food, one small and one big. It has protein (meat, fish, chicken, paneer) and some carbohydrates (potato,rice). Some weeks, if I make tomato salad, he’ll pack that too! In a nutshell, I bring a fat and heavy lunch bag to work. I can’t eat all of the food at a once, which is why he packs several small meals. The days he does not pack my lunch bag I eat at the cafeteria. 😥

As I do not drink Cola, I have my desk lunch with water or black tea.

Every week I speak with my mum about new and innovative meal ideas. You know me; I love varieties! I won’t bring same boring soup every week. In general, I only repeat my lunch dish once in 2-3 months.

Paneer Bhurji or Paneer stir fry is a very common Indian brunch/lunch/tiffin. This is a childhood recipe of my mum which I grew up eating. My mom used to do this to feed her monster kid (I am an only child, FYI). I am probably the reason she knows so many recipes. 🙂 She used to fill the stir-fry mix between two bread pieces to make a sandwich. I never liked paneer but I always loved this paneer sandwich.

The hardest part is making the paneer. You can buy it from the store and make this stir-fry, but trust me, there is nothing like homemade paneer. The Kitchn explains it pretty well here.

Homemade paneer, green pepper, green chile, onion, salt and black pepper: these are the only things you need. You can make this healthy, enjoyable lunch dish with only these six ingredients!

This recipe has very little spices which is why it’s so flavorful. Give it a try and let me know if you like my childhood recipe.

Instructions

1. If you are using store bought paneer, you can crumble it with your hand, but I made the paneer according to the Kitchn recipe.

2. In a non-stick skillet, over medium-high heat, heat oil. Add onion slices and cook for 4-5 minutes or until they are translucent.

3. Add green pepper and cook for an additional 3-4 minutes or until they are soft.

4. Add paneer and cook for an another 3-4 minutes while continuously stirring until you see brown on the edges. Make sure you stir continuously, otherwise your paneer will be burned. Serve with bread.
