Did I mention before food at my work cafe sucks totally? They don’t charge a lot, but they are really really bad!! I wonder some times how on the earth they can make so much bad food. I could barely eat from there! Even if I can get something to eat from there, I get stomach upset every time. Sigh…
My husband eats a huge bowl of cereal in the morning. So he is not dependent on the lunch very much. Every time I ask him – what did you eat, his answer is – ‘ummm, mmm, some stuff!!!’
Past few weeks were crazy busy for both of us. First we went to New York for 4th July. Then we finished work for our apartment. After that I had my wisdom teeth removed. :disappointed: So many things in just one month.
When I went to Trader Joe’s last Friday for our weekly shopping, I picked up some zucchini and russet potatoes. My husband asked me – what are you going to do with those? I never had zucchini in my life until I came to states. I tried some recipe from Internet, but nothing made me fell in love with zucchini until I made this burger. I was browsing through Pinterest for some veggie burger ideas where I found the zucchini burger. I love veggie burger because I don’t have to worry about calories at all. Also, I don’t like to eat meat much! Sorry guys, if I disappointed you.
You must be thinking, I am very much diet conscious. That is partially true. I try to eat healthy food as much I can. I work 10-7 and do brisk walk once a week. I can do more, but I would not do that. Rather than that, I watch Bob’s burger. :stuck_out_tongue_closed_eyes: I know, I know I have to exercise. I will one day!
It’s not that I don’t eat out. I am a restaurant hopper. We eat dinner outside once a week. So far, I did not repeat any restaurant. 😉
Recipe for Zucchini patties
Before I start writing the recipe, there are couples of things I want to say. First, I did not fry the burger. I baked it. Benefit of this is that you don’t feel bloated or greasy after eating. You can fry it if you want!
Second, I have my burger with cheese, onion, tomato, pickles and ketchup. My husband has his with mustard sauce. And we eat with some baked potato fries and diet coke.
Sometimes, I skip the bun and eat just the patties with salad. Sometimes, It’s your burger, you can have whatever way you want!
Yield : 9
- 2 big zucchini – grated
- 1 russet potato – boiled
- 1 jalapeño – finely chopped
- Oregano – 1 tsp
- Parseley Flakes – 1 tsp
- cayenne pepper – 3 tsp
- black pepper – 3 tsp
- salt – as you need
- flour/corn flour – 2 tbsp
- Bread Crumbs – 2 tbsp
- Olive oil – 2 tbsp
- Peel one russet potato and boil it.
- Grate zucchinis and add some salt to it. Then press the zucchini so excess water comes out. Please do it, else burgers wont be tight.
- Add boiled potato, herbs, spices, jalapeño and mash it well with hands.
- Add flour, breadcrumbs and 1 tbsp oil to make a mixture.
- Shape them into patties and drizzle another tbsp of oil on top of it.
- Bake at 400F for 40-45 minutes.
- If you see patties are still very soft, bake another 5-10 minutes. Keep checking the doneness so that it does’t get burnt.
